Here are the before and after images. If you have messy edges when you do this, use the Blur tool to smooth and blend them.

The Hue/Saturation adjustment, when used on a black and white image with Colorize checked, makes the selection all one Hue, or color. When I make the apple red, it is all colored exactly the same red.
       In the real world, a red object will in fact be colored with many hues, due to the combination of pigment and lighting. A color photograph, therefore, acts quite differently when adjusted with Hue/Saturation.
